A Nutritious Twist on the Classic Greek Salad

Introduction

Greek salad is a beloved Mediterranean dish known for its vibrant flavours and healthy ingredients. This version adds a wholesome twist by incorporating quinoa, which boost the nutritional value and provide a satisfying texture. Quinoa is rich in fibre, protein and essential minerals, making them an excellent addition to salads.

Ingredients

·       1 cup cooked Healthful Harvest White Quinoa and Healthful Harvest Red Quinoa mixed

·       1 Tbs Greek yogurt

·       1 cup cherry tomatoes, halved

·       1 cucumber, diced

·       ½  cup Mediterranean Pickled Peppers

·       100g feta cheese, cubed

·       1 cup salad greens

·       Roasted almond flakes for garnish

Dressing

·       2 tbsp extra virgin olive oil

·       1 tbsp red wine vinegar

·       1 tsp dried oregano

·       Healthful Harvest Pure Salt and black pepper to taste

 

Instructions

1.       Prepare the Quinoa according to package instructions. Allow to cool to room temperature.

2.       In a large bowl, combine the cooled grains with the Greek yogurt.

3.       Plate the grains centre plate and arrange the cherry tomatoes, cucumber, feta , salad greens and pickled peppers around the grains

4.       In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt and pepper.

5.       Serve the dressing separate for guests to enjoy to their own tase.
